Why is it, that religious people use Einstein's belief as a last ditch argument against Atheists?

It's not like us Atheists hold him as some kind of infallible symbol - he is not our messiah or anything. We just respect him for his contributions to relativity and quantum mechanics. We know full well, that he was not an Atheist, but why do religious people somehow think he is our leader?
