Does dressing spoil or go bad?

I have a bottle of Chipotle Cheddar Dressing that until I just opened it 5 seconds ago has never been opened. The use by date has passed (May 8, 2011) but I tasted and it tasted fine, should I go ahead and use it? I'm using it with chicken.
